What you need:
4 whole wheat tortillas (save calories by choosing the smallest size you can)
4 chicken tenders
4 string cheese (break each one into two pieces, you will have a total of 8 pieces)
Salsa or chopped vegetables of your choice
What to do:
- Place chicken tenders in skillet with about 1/3 cup water and fajita mix and cook until cooked through.
- Place cooked chicken tender on whole wheat tortilla. On each side of the chicken place a ½ string cheese piece. Top with salsa then roll.
- If you are ready to enjoy right away, then warm in the microwave about 1 minute, or until cheese is melted. If you are saving these for later then you can wrap them in plastic wrap until you are ready.
- Storing: I made two for tonight’s dinner then wrapped another two in foil to store in the freezer for later.
