-1 can black beans
-1 can corn
-1 cup rice
-tortillas (I use the burrito size if I don't make them...don't make them they take too much time and honestly the machines make them much better than my hands)
Seriously who doesn't already have these things in their cupboard!?!
In a large pan put drained black beans and drained corn on low. Cook rice until tender and throw into corn and bean mix. Allow to mix for a few minutes and add seasoning to taste.
Here is where the fun begins. Everyone in our family likes things different, my husband likes to put cheese, bbq sauce and ranch dressing, into his tortilla. My daughter likes hers with a little bit of cheese and avocado. I like to put mine on lettuce and add pineapple, cheese, and avocado to the mix- with a little spicy ranch dressing- so good! The possibilities are endless and it's easy to appease everyone with this one. I like to serve this meal with a side of fruit and tortilla chips.
