This dinner came out of desperation. We were out of groceries and all we had was some chicken (for the husband), a can of black beans and some frozen corn and sweet potatoes. I wish I could pretend this was some genius idea I dreamed of but it wasn't. It was desperation people. But shockingly it turned out fabulous. Everyone loved it, seriously.
What you will need:
- 1 can black beans
- 3 chopped medium size sweet potatoes
- tortillas (I used corn tortillas that were sitting in our fridge)
Chop sweet potatoes into bite size sections and bake on 375 for about 20 minutes. Throw them in a pan with a can of black beans and let simmer. Add garlic, salt and pepper to taste. Serve in warm tortillas and add any toppings that you want (or if you don't have any they taste great alone...I promise). If you did have it, I would suggest adding avocado, shredded cheese, lettuce and salsa! We served ours with some yummy corn on the cob and fruit.
